Chicken Fiesta Salad

A Dumb Name for a Delicious Dish.

I cannot say that I created this dish because it wouldn't be entirely honest. I was inspired by a deli item at a (now closed) grocery store that was ridiculously overpriced at $7.99 per pound, ten years ago.

 

I was given a sample and fell in love. I promptly requested a whopping quarter of a pound with the intention of recreating a more budget friendly version. Also, it needed a little more heat. ;)

I altered it quite a bit but it has the same essence as that chicken salad I tasted years ago. I swapped the obvious lemon for lime, doubled (ok, maybe tripled) the cilantro & used my own salsa recipe instead of their pico de gallo. This recipe is a winner in so many ways, guys. Fast, easy, frugal, refreshing & healthy to boot. 500 million bonus points for the fact that I don't have to turn on anything heat producing to make it, because Fresno summer.

400 million bonus point deducted for the fact that I called this recipe "Chicken Fiesta Salad." It's a dumb name, but I'm stuck with it because it's what my family has come to know it by. Now that I've told you, it's what you'll come to know it by too, and the dumb name will carry on. The name always reminds me of some lousy recipe on the back of a package...or perhaps a Pinterest recipe no one should try. It's unfortunate, really because this is absolutely a recipe you *should* try, dumb name or not.

Anyway, how about we get to the recipe for the delicious dish with the dumb name:

Chicken Fiesta Salad

2 cans white meat chicken, drained well

1/2 - 1 cup of Andrea's Salsa. Find the recipe HERE.

1 bundle of cilantro, chopped

juice of 1 lime

drizzle of olive oil (optional)

liberal pinch of salt

Yeah, that's really it.

Combine all the ingredients. Test for salt. Add pepper if you want (I don't want.) Add more salsa if half a cup wasn't enough. Drain off any excess juice. Refrigerate until cold and deliciously married. Feel free to add diced avocado upon serving if you're feeling extra extravagant. ;)

Serve with corn chips.
