One of the best ways to save money AND improve the quality of your dishes is to make your own dressings.
It's really easy to do, usually made from ingredients found in your pantry and spice cabinet and the taste is unparalleled!
Yesterday, I threw together a pasta salad for the hubs because it's his favorite. The dressing was made super quickly in the blender and everything came together really fast after that. Tri-color rotini, cheese cubes, pepperonicini's, a few slices of pepperoni and we were done. I would have preferred more veggies, but I used what I had, and frankly, he cleaned his plate, so I'll call it a win. ;) I love that you can put just about anything in a pasta salad and it tastes good. :) Last Night I served it with pulled pork (topped with homemade habanero hot sauce) and baked potatoes, and the people were happy. Double win.
Anyway, back to the dressing. Put it on a salad, use it as a marinade, or dip crusty bread in it. No matter how you use it, just be sure to pat yourself on the back for saving a trip to the store for a less-delicious-than-this bottled dressing. You're a pro!
Italian Salad Dressing ( I doubled for the full box of pasta)
Makes 1 1/2 cups
1/2 cup neutral salad oil, such as canola or sunflower
½ cup olive oil
1/4 cup plus 2 tbsp red wine vinegar
1 large garlic clove
¼ green or red bell pepper (I used green but suspect red may be tastier)
2 teaspoons Dijon mustard
1 teaspoon honey
1 teaspoon kosher salt, plus more to taste
1/2 teaspoon dried oregano
1/4 teaspoon dried basil
1 teaspoon crushed red pepper
Freshly ground black pepper, to taste
Add all ingredients to blender. Blend until completely combined. Store in a mason jar so you can give it a good shake when you serve it. Keeps for 1 week in the fridge.
