Chai Spiced Chia Pudding

A Spicy Spin on a Superfood Snack!

I love anything called a "Super Food." There is something about eating them that makes me feel like everything is going to be ok.

I'm lying to myself, of course, but for a moment, I feel like that thing I just ate can make me "Super" too.

I love things like broccoli raab, blueberries, cinnamon, raw milk and of course, my bff for life, *avocados*, all of which are on Dr. Axe's list of "Top Ten Super Foods."

But I also love the Super-Duper Chia Seed. Here's why:

  • Chia seeds are crazy high in anti-oxidants
  • They have a high concentration of plant-based omega 3's
  • They are a complete protein (super rare for a plant based protein!)
  • Chia seeds are extremely high in fiber to boot. Chia seeds are about 37% fiber!
  • They are so good for your digestive tract, heart health, blood sugar control and help to increase energy while reducing sugar cravings.

I mean, how could you not love them?!

Yeah, I know. I know how you can not love them. Especially if you've tried those chia drinks and felt like it was some sort of bizarre way for you to be tortured. My husband LOVES them. I'm not a fan. At all. If that was all I knew of chia seeds, I'd hate them too.

But you know what I LOVE? Chia pudding.

Know what else I love? Chai spiced anything.

I went out for breakfast with my sweet hubs this weekend. He asked me where I wanted to go, as if that's a real question. I have not chosen a single other place since we parked here. I always choose this lovely little vegan spot called "The Shine Cafe."

I don't like food labels. I won't call myself a vegan, but I always appreciate a good restaurant with fresh, local ingredients and healthy options. Shine is all of those things.

I ordered the chia pudding (hadn't had it in a while) and inspiration struck! As soon as we were done eating I told the hubs I had to go to their market next door to get some spices.

According to Google, about 922,000 other people had considered the same idea, and I'm not sure that mine isn't the same as someone else's, but I can say that its DELICIOUS and that I thought of it before I looked at any of the other 922,000 recipes for it. Long story short? I'm not special or super creative, but for a moment, I thought I was a genius.


Also, original or not (I'm not gonna go read them all to find out), I can say this recipe is GOOD.



A couple of tips for you before you get to work:


  1.  Chia absorbs a lot of liquid, and that can mean your hydration. Be sure to drink your water when eating this superfood!
  2. Chia seeds can be expensive at the local specialty/health food stores. If you have a Mexican market near you, go there...always the best prices as it's a pretty common thing in Mexican foods and beverages! I will have to share my favorite Chia Fresca with you soon.
  3. Some people sprinkle them on food, but they can be hard to digest dry. Soaking them (like in almond milk with chai spices, LOL) will help them be more digestible and beneficial to your body.
